Grilled Veggies with Lil Mama's Chipotle Dry Rub

This is a personal favourite and very easy to make! But keep in mind, the recipe seems simple but the secret is in the seasoning and not to overcook the veggies.



Ingredients

  • 2 zucchinis, cut into 1/2-inch slices

  • 2 green bell peppers, cut into chunks

  • 1/2 pound button mushrooms (optional)

  • 1/2 pound cherry tomatoes

  • 1 red onion, cut into 1/2-inch-thick slices

  • 1/2 cup extra-virgin olive oil

  • Spcy Grls Little Mama's Chipotle (Dried Seasoning)

  • freshly ground black pepper to taste


Directions

  1. Preheat an outdoor grill or bbq for medium-high heat, and lightly oil the grate. Ensuring to oil the grate thoroughly, i LOVE using my basting brush to get all surfaces.

  2. Combine zucchinis, green bell peppers, mushrooms, tomatoes, and onion in a large bowl. Pour olive oil over vegetables and toss to evenly coat. Season with Little Mama's Chipotle Dried Seasoning and a pinch of salt (to taste)

  3. Grill vegetables on the preheated bbq grill until lightly charred, 3 to 5 minutes per side ensuring to rotate evenly to get those TV grill marks on the veggies.

  4. Remove from heat, set aside and serve.


Serving Notes

Make suer to let the veggies cool before serving.
